How we do it
Our goal is to create an IPA of great intensity and then elevate it even higher with a strong fermentation. Initially the focus is on the hop addition times, starting with a third of the additions during the wort boil, another third taking place during the whirlpool stage and the final third just 24 hours after the start of fermentation. This technique helps us extract complex and unique expressions of flavor and aroma from the hops we use. The beer is fermented with an ale yeast capable of withstanding high levels of alcohol. The final product is a Double IPA that balances strength with a strong, easy-drinking character.
